whick hotkey for this pie menu ?

Hi,

In Chapter 2 : Sculpt Gravity and Brush, you're using this pie menu :

What's the hotkey ?

I thought it might be 'Z' but on my Blender the 'Toggle Overlays' and 'Toggle X Ray' options don't pop up when I press 'Z'.
Is there an alternative hotkey or a setting to change to have all the options ?
