In this video, at 1min 37sec, you click on the mix shaders and it automatically gets routed to the Material Output simply by clicking on it. How does this happen please?

Hey rrealistic , this is from the Node Wrangler addon (which comes with blender but is not on my default) and Ctrl clicking on any node.
