When sculpting heads do you suggest doing a 'mirror' so both sides sculpt at the same time?

Yes, I do suggest that for sculpting a head. In fact I almost always start sculpting with symmetry enabled, then introduce asymmetry later (like posing the sculpture). Unless I'm gesturally sculpting a posed-character from the start.
