I didn't find the texture file in the downloaded course files, only the blend files for the various projects and the Fleur-Display font. Am I missing something?

The Texture is Packed in the .blend file. Click on the icon to unpack it:
Then you can use it in your own files.
Or you can download one yourself, of course.
