I can appreciate the HUMAN Sculpting course for those who want to make life-like "photorealistic" characters. Bravo!
However, it would be amazing if there was a full character course on how to make a "Stylized Character". Something like a Marvels SNAP, League of Legends: Arcane, Enter the Spidervese or Teenage Mutant Ninja Turtles.
I've scoured the entire catalog and the offerings are thin.
If there was a course that offered that, it would fit in so nicely with the Rigging and Animation course you already have.
I would definietly spend $100 - $200 on something like that.
Kent made this course a while back. An oldie but goodie:

You might want to check out this Course: BASEMESH: Create Stylized Characters Quickly with Blender
or maybe this playlist. NOTE: This includes the above-mentioned course: TRACK: Character Creation with Blender
The playlist starts with CORE: 3D Modeling and CORE: Sculpting. If you have already done those you can skip them. I personally would put short film character production and introduction to character modeling before pothead, but knowing Kent there is a reason he has it in this order.
And doing a "stylized" character would pretty much be the same as just about any of those in that list, just "stylizing" the character like you want it.
I know this isn't CGCookie, but I've started watching it and so far it seems good. It's a 20 hour YouTube Video. https://youtu.be/qy-wwP-b9HY
