insert and extrude galore :-)
now I have to get rid of the noise somehow...

    That looks awesome!

(The Noise is just a matter of more Samples and/or Denoising... (the default Viewport Render Settings don't give an as good result as the default Render Render Settings; lowering the Noise Threshold can help already with the Noise.)

Gave the free course a try. I'm quite pleased with the outcome.
For the choice of colors I used a color scheme from color.adobe which has a ton of suggestions.

The explanation are straight forward and easy to follow.
    Thumbs up for the instructor!

I'd would love know how to render a combined shader/wireframe view to get a look to the topology. This excersice is about the flow, right?

Ok, with viewport render it works. But is there something similar for a proper render also?

Well, not really. What you can do, is Add a Wireframe Modifier with a different Material, something like this:

    Wireframe.png

If you upload a model to Sketchfab, there is also an option to show the Wireframe.

And there is a Wireframe Node in the Shader Editor, but that gives the Triangulated Wireframe:

    Wireframe_01.png

Which is probably rarely what you'd want.

My guess is, that you can also find Addons that do Wireframe Renders.

And there for sure are other ways to do this as well.

Yeah there are also probably lots of wireframe shaders in the Blender Market or free tutorials online. But no, there aren't any legit render passes or something you toggle that would give you THE way to get the wireframe, is all workaround for the most part.
