Cube vs sphere

Is there a particular reason, why we have to create a cube and apply a subdivision modifier to it, but not a uv sphere with as many segments and rings as we want?

I don't think there's a particular reason no, it's just that there's various shapes and methods available for doing practically the same thing and you pick the one you want. There's no wrong answer. Now why did your brain pick one over the other? That's a deep question, one that involves freewill, naturalism, causality and even quantum mechanics, so we'll leave it there.

    Solution

    Hi real_human ,

That is because a subdivided Cube has a better, more regular Topology (consists of only quads and they are very similar in size and shape).

With a UV Sphere, the same Brush Stroke on different parts  of the Mesh can have different results, which is not ideal.

As soon as you Remesh, it's all the same if you started with a UV Sphere or a Cube.
