I'm a beginner and trying to learn, however I'm stuck and haven't been able to find out how to do this:
Does anyone know if it's possible to rotate all these faces at once, so that they're 90 degrees/straight along the z axis? Hope that made sense.

I hope I understand correctly what you are trying to achieve.
What I would do, is not trying to Rotate, but to Extrude the 'top' edges down and Delete the 'bottom' Edges:
