    Is the material tab in the properties menu useful when you want to use UV mapping and baking or is it only useful when you don't want to use those?

      No, the material tab is plenty useful regardless of UV mapping or baking. If you watch the Fundamentals of Shading (Blender Render chapters) you'll see how useful it is!
