What are the advantages to painting the vertices as opposed to the texture itself? I know that w/r/t lighting, getting color on a per-vertex level is essential, like with phong/lambertian reflectance models, but I feel that can easily garnered from a texture...

    In my experience, I've opted for vertex painting because it doesn't require UVs and it can be good for quickly filling colors based on mesh selection. For example, I used it in this lesson: https://cgcookie.com/lesson/painting-base-colors/ When I was in college they taught us vertex lighting was important in game design. Not sure if that's still relevant in today's game industry...
