my edge loop doesn't go all around like in the video (but i feel like it shouldn't because it's hitting a pole with 5 edges?)

All's fine.

The Edgeloop that you have selected doesn't go all the way around, because, as you say, it hits a Pole.

There are a few edgeloops that do go around on both sides of that loop:
