Where's the Draw all edges option in blender 3.0?
The 'old' Wire checkbox is now the Wireframe Overlay and the Draw All Edges checkbox is when you set the Wireframe slider to 1, which is already the default in 3.0 (even in 2.80.75, but there used to be earlier 2.80 versions, where the default was 0.5).
When missing some Edges, make sure that Optimal Display is off (is on by default since 2.83):
