      There’s a tab called File at the top. Click on it and select User Preferences. Turn on “Emulate 3-Button mouse”, and then you can use Alt and Left click instead of middle mouse button.

      At the very top, there will be a list of tabs. If you’re on object mode (which is the default mode- the one he’s in on the video), select the one Object. The drop down will have an undo button. Same for edit mode under Mesh.
      Or, you could hit CTRL + Z if you’re on windows.

      Go to the “About” tab. Near the bottom is a link the tells you what to do.

      You can enable Emulate 3 Button Mouse via the User Preferences > Input. This allows you to substitute ALT+LMB for the MMB.

      I’m not quite sure what you mean…if you’re trying to constrain a transform (such as move, rotate, scale) to a specific axis then you must first activate the transform tool and then press either X, Y, or Z to constrain the transform to the specified axis.
