For more extreme poses you'll have to use more Weight Painting and possibly Corrective Shape Keys to fix intersection and deformation areas. This gets into more advanced rigging that I didn't cover in this course.
Basically the way it works is to create a Shape Key for the mesh that is then enabled while in the extreme pose, thus fixing the problem area.
