Hello! Is it possible to use these techniques when you are trying to shape fingers out of cylinders? Would this be a good idea?

You sure could! It's quite common to use a Subdivision Surface modifier in order to smooth out simpler, rougher geometry. This allows you to create a more organic surface while keeping the actual geometry relatively simple.
