A while ago for my first exercise I made curves into a square with the bevel tool. But, for some reason the result produced unwanted geometry to my mesh (The one on the far right https://sketchfab.com/models/d3613deed87c4c929e049ca21492161d ). Why did this happen?

I believe you're referring to this bit? http://cl.ly/gJ46 The reason this happened is because you have far more vertices on the inner curves than on the outside square, thus the area is filled with triangles to connect all the edges. In Blender you can fill these areas with NGons by selecting all the triangles and pressing F, but when you export to Sketchfab you'll still get triangles as the NGons are not supported so they're converted upon export typically.
