Hi i know the comments mention that the optimal display default needs to be turned off. I did this however every time i do this it still doesn't change it. Do i need to change it in preferences somewhere?
Could you post a screenshot?
(I'm quite sure that it's not something in the Preferences...)
Here is what i get and I have disabled the optimal option and it still looks like this.
Try using 'Simple' in stead of Catmull and also enable Wireframe in the Overlays Menu:
I think I'm having the same issue.
Here's my object in edit mode:

Wireframe is at 1.0 in the Overlays Menu, I'm on Blender 2.91.0.

Make sure the Wireframe is all the way at 1.0, A bit less might give this behavior:
Try using Blender default:
Maybe try 2.91.2
Can't think of anything else;)
