Since the head is such a simple cubish shape, I opted to save myself the time deleting half and adding the modifier. Not a huge savings and adding a mirror is fine practice.
This is not a consequential piece of the body to need the extra setup. Same with the torso and abdomen pieces. It's quite easy to make their mesh adjustments symmetrical on the fly.
